Recipe

I told Amy I would post this so here it is:

Skillet Ziti with Chicken and Broccoli

Serves 4-6
Start to Finish 30 minutes

1 lb. boneless chicken cut into 1 in. pieces
3 T unsalted butter
1 onion, minced
1/4 tsp. red pepper flakes
1/4 dried oregano
3 garlic cloves, minced
8 oz. ziti (2 1/2 cups)
2 cups chicken broth
1 cup milk
1 bunch of broccoli florets cut into 1 in. pieces
1 cup jarred roasted red peppers (i used sun dried tomatoes)
1 oz. parmesan cheese, grated
2 T fresh lemon juice (optional)

1. Melt 1 T of butter in skillet over medium heat. Add chicken and cook only about 4 minutes until lightly browned but not fully cooked. Transfer chicken into a bowl.
2. Add 1 more T of butter, the onion, red pepper flakes, oregano and 1/2 tsp salt to skillet. Cook until onion is softened (5 minutes), then stir in the garlic.
3. Sprinkle the ziti evenly into the skillet and pour the chicken broth and milk over it. Cover and bring to a simmer for 2 minutes.
4. Reduce heat to medium low and stir in the broccoli and roasted peppers. Cover and simmer for about 8 minutes. Stir occasionally. Pasta should soften and broccoli will turn bright green.
5. Stir in chicken. Cover and continue to simmer until chicken is cooked through (about 3 minutes longer)

you've gotta try the chicken parm from that book...i put a slice of that fancy bacon (who's name escapes me right now)on it...yum

by the way, the owl came in the mail yesterday. love it! my fridge is not metal...go figure, so i have it hanging out on the stove. thanks again tania, it's quite lovely.
